Is there any way of making a healthy pain au choc? I can make healthy banoffee pie, but pain au choc? Anybody?
Blend together brazil nuts, dates and banana and viola! Banoffee pie! I am looking for something equally ‘cheaty’ for other classics, please…? Eh, may look through my cook books.

ReplyDeleteI'm lazy so I do just that and blend the ingredients but here is the original:
ReplyDeleteBanoffee Pie
100g Brazil nut
200g dates
3 ripe org bananas
100ml-300ml org coconut milk
Soak dates in coconut milk
Put the nuts and rest of dates in a food processor and blend to make sticky dough.
Press the dough into a small tart tin and refrigerate for hours
Blend the coconut milk /soaked dates mixture to make a fudgey sauce
Add more coconut milk if necessary
Finish with a covering of sauce on top.
